Shrimp Ceviche

A healthy Peruvian dish with so much flavor is Ceviche! Traditionally made with raw fresh fish or shrimp, this traditional dish can make some new cooks wary of attempting so Chef Brandon has crafted an introductory ceviche recipe. This first step recipe will have you falling in love with ceviche and we are excited to learn how much you enjoy this one.

Ingredients

2 lbs.   Extra-Large Shrimp, Peeled, Deveined and Halved Lengthwise
½ C.     Fresh Orange Juice
½ C.     Fresh Lemon Juice
¼ C.     Fresh Lime Juice
¼ C.     Ketchup
3          Cloves Garlic, Crushed
½ C.     Diced White Onion
½ C.     Diced Red Onion
1          Green Onion, Thinly Sliced (white and green parts)
¾ C.     Diced Tomato
1/8 C. Minced Cilantro
1 Tbsp. Diced Jalapeno, Seeded
1 Tbsp. Olive Oil
1 Tbsp. Hot Sauce
2          Avocados, Diced
Kosher Salt
Slices of Lime

Instructions

1.    Add orange juice, lemon juice, lime juice, ketchup and garlic to a medium saucepan and bring to a boil. Add shrimp; reduce heat and cook for 3 minutes. Using a sieve, drain shrimp reserving citrus juice mixture.

2.    Place shrimp on a plate and put in the fridge to chill. Cool down the citrus mixture by placing it in the freezer for 30 minutes or nested in a bowl of ice water.

3.    Add tomato, white onion, red onion, green onion, jalapeno, cilantro, olive oil, and hot sauce to the cooled citrus mixture. Add chilled shrimp stirring well to coat.

4.    When ready to serve, spoon diced avocado into the bottom of each glass and spoon shrimp mixture with juices on top. Serve immediately or chill up to two hours. Garnish with lime slices.
