Shrimp and Feta Potato Bites

Ingredients

2 Large      Baking Potatoes, Scrubbed and Sliced to 1/4 Inch Thickness

1 Tbsp        Olive Oil

2 Large      Cloves Garlic, chopped

1 Lb           Peeled and Deveined Shrimp

2/3 C         Plain Yogurt

1/2 C         Feta Cheese

1/4 C         Chopped, Pitted Kalamata or Black Olives

1/4 C         Fresh Dill, chopped

1/3 C         Mashed Potatoes

Salt and Pepper to Taste

Preparation

1. Preheat oven and deep fryer to 350°F.

2. Heat the oil in a skillet over medium heat. Add garlic and cook for 1 minute. Arrange the shrimp in a single layer and cook 2-3 minutes, until they start to turn opaque. Flip and cook 1-2 minutes more, until pink and cooked through. Roughly chop the cooked shrimp and transfer to a medium bowl.

3. Blanch the potato slices by placing in deep fryer 5 minutes or until tender and golden brown. Once done pull potatoes from oil and drain any excess oil off.

4. Stir yogurt, mashed potatoes, feta cheese, olives, dill, salt, and pepper.

5. Once potatoes are cooled, place potatoes back into the deep fryer for 2-3 minutes to get crispy.

6. Place potato circles on a sheet pan. Potatoes must be lying flat on the pan, not stacked. Once all potatoes are laying flat side by side, add sea salt to taste. Scoop the shrimp and feta mix on to each potato circle.

7. Bake for 5 minutes, until shrimp stuffing is hot.

8. Remove and enjoy!
