Roasted Cauliflower Steak Sandwich

Where’s the meat? Not here! A flavorful cauliflower steak with citrus cumin slaw will have your taste buds so thrilled you will be wondering if you have room for a second.  

Ingredients Cauliflower Steak

1                           Head of Cauliflower

1/4 C.                    Extra Virgin Olive Oil

1 Tsp.                    Sea Salt

1 Tsp.                    Garlic Powder

1 Tsp.                    Smoked Paprika

1/2 Tsp.                Chili Powder

Fresh Parsley for Garnish (Optional)

Preparation Cauliflower Steak

1.) Preheat oven to 375°F.

2.) Remove the leaves from the base of the cauliflower using a sharp knife. Slice the cauliflower in half, then slice two steaks about one-inch thick from each half. You will have a generous amount of leftover cauliflower which would be great to use in a stir fry or create a mashed cauliflower side.

3.) Mix the olive oil, sea salt, garlic powder, onion powder, smoked paprika, and chili powder in a small bowl.

4.) Place cauliflower steaks on a baking or cookie sheet and brush liberally with the seasoning mixture. Cook for 15 minutes and flip. Cook an additional 7 minutes. While the steaks are cooking prepare the slaw.

Ingredients Citrus Cumin Slaw


                1/4 C.                    Lime Juice, Freshly Squeezed

                1/4 C.                    Orange Juice, Freshly Squeezed

                1 Tsp.                    Ground Cumin

                1/4 Tsp.                Kosher Salt

                1/4 Tsp.                Chili Powder

                1/2 C.                    Extra Virgin Olive Oil


1                           Head of Green Cabbage, Shredded

1 Tsp.                    Salt

2 C.                        Carrots, Shredded

1 Lrg.                     Jalapeno, Julienned Thin

1 C.                        Cilantro, Roughly Chopped and Loosely Packed

Preparation Citrus Cumin Slaw

1.) Combine all vinaigrette ingredients in a blender and process until smooth. If you do not have a blender, combine and whisk vigorously until smooth. Set aside.

2.) Add shredded cabbage to large strainer and toss with salt. Set in sink or over bowl and allow salt to soften the cabbage for about 10 minutes.

3.) Add salted cabbage to large bowl and toss with carrots and jalapenos. Add small amount of dressing and toss well to combine. Continue to add vinaigrette until you’ve dressed it to your liking.

4.) Refrigerate until ready to serve. Just before serving, toss in cilantro and add salt and pepper to taste.

Preparation of Sandwich

1.) Place cauliflower steak on bun and add slaw on top.

2.) Pair with your favorite kale chips or zoodle pasta salad for a veggie-full meal.
