Rack of Lamb
A rack of Lamb is not only impressive and delicious to eat but intimidating to think about cooking! Chef Brian of Copper Rock Steakhouse takes us through the 6 steps to grilling a rack of lamb that will impress everyone at the table.

Ingredients
1/2 Rack Lamb (Frenched)
4 Cloves Garlic
1 Tbsp Fresh Rosemary
4 Tbsp Extra Virgin Olive Oil
1/2 tsp Salt
1/4 tsp Black Pepper
Preparation
- Mix all ingredients into a bowl large enough to marinate the lamb in. Marinade lab 24-48 hours before cooking will make for a more flavorful rack of lamb. If desired, soaking lamb in milk for 2 hours before marinading can reduce the gaminess protein.
- Remove from marinade and drain 45 minutes – 1 hour prior to cooking.
- Want to make sure your dish is extra beautiful? Wrap the bones in foil to preserve the color.
- Char grill over medium/high heat for 15 minutes on each side. Or If not using a grill, place in oven for 30 minutes at 350°F.
- After cooking, let lamb rest for 10 minutes. Slice chops at the bone to make ‘lollipops’
- Serve with desired side. Chef Brian suggests smashed fried potatoes with a mint sauce steeped in au jus.
