Wild Rice Salad

Ingredients
2 C Cooked Wild Rice (about ¾ cup dry)
1/2 C Blueberries
1/2 C Strawberries
1/2 C Raspberries or Blackberries
1/2 C Toasted Pecans, Walnuts, or Pistachios, Roughly Chopped
1/2 C Diced Celery
1/2 C Diced Red Bell Pepper
1/4 C Thinly Sliced Green Onions
1/4 C Chopped Fresh Parsley
Optional: 1/2 C Crumbled Feta or Goat Cheese
Honey Dijon Vinaigrette
1/3 C Extra-Virgin Olive Oil
3 Tbsp Apple Cider, Champagne, or White Wine Vinegar
1 Tbsp Dijon Mustard
1 Tbsp Honey or Maple Syrup
1 Small Garlic Clove, Finely Minced
1/2 tsp Kosher Salt
1/4 tsp Cracked Black Pepper
Preparation
Preparation for Wild Rice Salad is as easy as cook, mix, assemble, enjoy!
- Prepare wild rice according to the package directions. (Usually simmer 45-50 minutes until chewy and tender.) Drain excess water, spread on a sheet to cool.
- Assemble the Honey Dijon Vinaigrette. In a small jar or bowl, whisk together vinegar, Dijon, Honey, Garlic, Salt, and pepper. Slowly drizzle in olive oil while whisking until fully incorporated.
- Assemble the salad. In a large Bowl, combine cooled wild rice, cranberries, nuts, celery, peppers, onions, and parsley. Toss gently with the vinaigrette.
- Taste and adjust. Add more salt, pepper, or even squeeze a lemon if needed.
