Cinnamon Sweet Potato Bread

All the flavors of the holidays come together in a delicious dessert bread. This Cinnamon Sweet Potato Bread recipe can also be easily altered to make it vegan or gluten-free to allow all your party guests the opportunity to enjoy it! We are so excited to incorporate such versatile ingredients such as sweet potato into this dessert. While this is a dessert, sweet potatoes have naturally nutritious benefits like vitamins and minerals, antioxidants, immune support, eye and heart health and more. This bread will have you smiling while grabbing a second slice.

Ingredients

1 ½ Cup                Mashed Sweet Potatoes

3 Tablespoon     Water

2                             Eggs (Or ½ Cup of Applesauce for Vegan Friendly)

½ Cup                    Vegetable Oil

¼ Cup                    Buttermilk, Yogurt, Greek Yogurt, or Sour Cream

1 Teaspoon        Vanilla Extract

1 ¾ Cup                All Purpose Flour or Gluten-Free Flour

1 ¼ Cup                Granulated Sugar

¼ Cup                    Brown Sugar, Packed

2 Teaspoons      Baking Soda

1 Tablespoon     Ground Cinnamon

1 Teaspoon        Ginger

1 Teaspoon        Nutmeg

½ Teaspoon        Allspice

½ Teaspoon        Ground Cloves

Pinch of Salt

 

Procedure

  • Preheat oven to 350° Spray one 9×5-inch loaf pan or two 8×4-inch loaf pans with a floured cooking spray or grease and flour the pans then set aside. If you would prefer to have individual desserts perfect for on the go or parties, use muffin pans.
  • Peel the sweet potatoes and chop them into 1-inch chunks. Place chunks into a large microwave safe bowl. Add three tablespoons of water, cover with plastic wrap and cook on high for 10-15 minutes, or until the potatoes are fork tender. Pour off any water and then mash with a fork. Allow the sweet potato mash to cool. If they are still hot, they could scramble your egg in the next step.
  • Much like banana bread, Cinnamon Sweat Potato Bread has you mix all the wet ingredients together and then the dry ingredients separately before combining. This allows the ingredients to evenly distribute throughout the mix. Now that your potatoes are cooled, add in the eggs, oil, buttermilk or yogurt option, and vanilla. Whisk until combined; Set aside.
  • In a large bowl, combine the dry ingredients: flour, sugars, baking soda, cinnamon, ginger, nutmeg, allspice cloves, and salt. Whisk to combine.
  • Pour your wet potato mixture over the dry ingredients and stir to incorporate. Take your time stirring until no stray bits of dry ingredients are visible, folding and scraping the bottom of the bowl with a spatula as necessary. Stir and fold with a gentle hand as to not over mix and over develop the gluten causing a tougher bread.
  • Place batter in your prepared pan(s) or muffin tins. Smooth the top lightly with a spatula. Bake for 60-70 minutes for a 9×5-inch pan, 40-45 minutes for 8×4-inch pans, and 18-20 minutes for muffin tins or until the top is domed, golden, and springy to the touch.
  • Allow bread to cool in pan for 10 minutes before turning out onto a wire rack to cool.
